Baked Seasoned Squash

(That Even Squash-Haters Should Enjoy)

When I was growing up, I didn't like squash. In fact, it was one of my most unfavorite things to eat. Then I married my husband and found out he just loves squash. All squash. So I had no choice but to figure out a way to cook it in a way that was appealing to both him and I. This recipe that I came up with has turned me into a squash eater. But not only me, my children love it as well. In fact, even my finicky daughter gets seconds.

Since squash is in abundance at this time of year, why not give this recipe a try? Who knows? Maybe there's someone in your house who could become a convert!

 

Ingredients:

 Wash squash and cut in half. Remove seeds. Pour the water into a baking dish and add the squash cut side down. Bake for 45 minutes at 350 degrees. Take out of oven and let cool a little. Scoop squash out of shell into 2 quart casserole dish. Add the rest of the ingredients, stirring well. Return to the oven and bake for 15 minutes. Serves five.
