Choco-Chocolate Chip Pancakes

A few years ago, when I was planning a sleepover for one of my children's birthdays, I was looking for something special to make for breakfast. It was then that I remembered the pancakes I had at a popular restraint as a child. So I set out to see if I could copy, or at least come close to that recipe. After a couple of tries, I got it right. Now, my children, as well as my husband, look forward to the mornings that I make them. I hope you and your family enjoys them as well.

Ingredients:

Procedure:

Combine all dry ingredients in a mixing bowl. Add eggs, oil, and milk. Mix thoroughly. Using soup ladle, pour about cup of batter onto hot, greased frying pan for each pancake. Immediately sprinkle chocolate chips onto the pancakes. You can put as much or as little as you desire. Flip the pancakes when they are puffed and dry at the edges. Cook until light brown. Although it is a little hard to tell with chocolate pancakes, you can still see the brown. Makes about 9 pancakes.

The first time I tried this, I had the chocolate chips in the mixing bowl with the rest of the ingredients. The problem was, the first pancakes hardly received any chips. They had all settled on the bottom. As a result, the last pancakes received too many. That is why I sprinkle them directly on while the pancakes are frying.
