Phyllis' Fish Batter

Here's a recipe that has been passed down through my family. I hope you enjoy it as well.

Ingredients:

• 1 cup flour
• 2 tsp. baking powder
• 1 tblsp. vinegar
• 1 tsp. salt
• 1 cup water (or 1 egg and 3/4 cup water)

In bowl, mix batter well. If fish is wet, dry well with paper towels, or the batter won't stick. Dip fish in batter and deep fry in hot oil until batter is a golden brown. Batter mix coats about 2 lbs of fish.
